Current thoughts/Cookies

current thoughts and cookies.

but cookies first. the other night i seriously stumbled upon the best cookie recipe ever. and i am happy to admit, i made it up! basically they are just a hearty classic chocolate chip cookie and i promise they turned out perrrrff!

Totes Perf C.C. Cookie:

2 3/4 cup all purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

2 1/2 sticks cold butter (cubed)

1 3/4 cups brown sugar

1/4 cup of sugar

2 eggs

1 tablespoon vanilla extract

2 teaspoons of almond extract

1 cup of dark chocolate chips

1/2 cup of oatmeal

1/2 chopped pecans

2 tablespoons of chocolate peanut butter

pinch (or 2 or 3) of cinnamon

First: sift together your flour, baking powder and soda, and salt in a big bowl

Second: (in electric mixer) beat together your butter (cubed), brown sugar and granulated sugar. Mix on medium speed for about 4 minutes. Then beat in your eggs one at time. Add vanilla and almond extract. Then change mixer speed to low and add your flour (gradually).

Third: stir in chocolate chips, oatmeal and pecans, then place dough in plastic wrap and refrigerator for at least an hour (i chilled mine for 24 hours).

Fourth: Preheat oven to 375. Put a piece of parchment paper on 2 cookie sheets. Then drop heaping spoon fulls of dough about an inch apart. Bake until golden on the edges and soft in the middle about 12-15minutes. Let cool about 15 minutes before removing from cookie sheets.

bon appetit!

and now for my current thoughts.

I stumbled upon this quote on the ever so addicting Pinterest tonight: “And the day came when the risk to remain tight in a bud was greater than the risk it took to bloom.” -Anais Nin

As much as you might assume that I should have realized and felt this way as a teenager, I definitely did not and am only now fully experiencing the magnitude of what this means. Recently I have decided to make choices that benefit me and not every single person around me. If you know me at all, you might know this is a huge step for me. My whole life what I said, or didn’t say had alot to do with what was best for the situation and for everyone involved. As of late I have been paying attention to what I feel is ‘right’ for me in different scenarios and I must say- it is very freeing. I feel happy and while others may not be totally in line with me, I don’t really care. My life is fully dependent on my ability to ‘bloom’ as a person and how much I allow myself to make the right decisions for me.

So- that being said. Don’t be afraid to stand up for yourself and do what you feel is right for you. The people who really love you will continue to do so and the ones that don’t.. eventually won’t matter as much.

cheers, and seriously make those cookies!

family – noun

family: noun ˈfam-lē

  1. a people or group of peoples regarded as deriving from a common stock

2. a group of persons of common ancestry; (clan)

I like to think that I have a larger than normal family due to the fact that I consider some friends as family too. Those two definitions are my favorite for the word family. 1. a people or group of peoples regarded as deriving from a common stock. I like to think as common stock as ranging beyond old world relatives and more into people who also share common thoughts (silent and spoken), ideals and passions. 2. a group of persons of common ancestry; (clan). Despite what ethnicity you think I am, I am actually mostly Irish and Scottish which means I drool at the word clan! I mean come on how cool to be part of a clan, I think my true clan name was ‘Turnbull’ actually I don’t think that, I know it and have ALL the documentation to prove it too (nerd/hipster).

Back to the point, I like to think that I have my own clan of people I have really let into my life whether they are my true immediate or extended family or soul friends who we all run into from time to time. It’s because of people like this, it’s because of my family that I can survive Monday’s like today when honestly I had to do the hardest thing of my working career. I made it, still breathing  by the kindness of my family. The past few days have been filled with love and sweet surprises it’s like the world knew I needed it.

Family and people can blow your mind like that. So take the extra mile for them, take down the wall, and enjoy the little moments you get because when you string those moments together you get the truly beautiful part of life.

Cheers to my family! You all will never know how much I appreciate and love you.

Take me to norway

somebody take me to Norway!

In 2005, Norway initiated a 15-year project to generate more tourism by hiring architects & designers to build rest stops for its stunning landscape. This is what the National Tourist Routes In Norway has achieved so far.

Growing Up

growing up you had a bad day when you forgot to study for a quiz, a friend ignored you or your crush flirted with someone else. As a grown up having a bad day takes on a whole new meaning….

i’m choosing to deal with my grown up bad day with my love, wine, glitter nail polish, sushi and vampire(s) (vampire diaries)

in someways being an adult is bad ass and in others you just realize your just an older little girl.

cheers to the glitter nail polish, putting smiles on girls of ALL ages.

Planning a trip

have some friends planning a trip to the city soon, and it makes me crave it.

there is no place like NYC and i can’t wait to go back. hopefully sooner rather than later.

it’s one of the greatest places in the world- to me at least.

NYC is magic.

a few compliments i’d like to give (myself and others)

”The greatest compliment that was ever paid me was when one asked me what I thought, and attended to my answer.” -henry david thoreau

here are my top 5 compliments i need to remind myself of and would like to remind most of you of. and to be honest i don’t dish these out often- so take me seriously on this.

1. I admire the way you base your life off of your own intuition not with the opinions of others.

3. I really appreciate how you can find joy in doing nothing, and you never feel guilty about it.

5. People really matter, and caring about them is a task most people don’t fully take on- but you do so thanks for that.

*and an extra for good measure.

6. You are enough, always and forever.

well, this was tearfully inspiring- want to watch the whole documentary.
